Cooking With Coles: Courtney Roulston’s hearty homemade minestrone

Ingredients

Serves 6

1 tbs olive oil

200g streaky bacon rashers, cut into 1cm batons

2 celery sticks, chopped

2 carrots, chopped

1 tbs thyme leaves

510g jar Coles Simply Tomato, Onion & Garlic Pasta Sauce

4 cups (1L) salt-reduced chicken stock

100g Coles Large Pasta Shells

½ butternut pumpkin, peeled, seeded, cut into 2cm pieces

2 zucchini, finely chopped

420g can Coles Simply 4 Bean Mix, rinsed, drained

150g green beans, chopped

60g pkt Coles Australian Baby Spinach

¼ cup (40g) finely grated parmesan

Method

1. Heat oil in a large saucepan over medium heat. Add the bacon, celery and carrot and cook, stirring, for 6 mins or until bacon edges are crisp and vegetables are tender.

2. Add the thyme, pasta sauce, stock and ¾ cup (185ml) water to the pan and bring to a simmer. Add pasta and cook, stirring, for 5 mins or until just tender. Add the pumpkin, zucchini, bean mix and green beans and bring to a simmer. Cover and cook for 6-8 mins or until the pumpkin is tender.

3. Stir in spinach until just wilted. Season. Ladle soup into serving bowls and top with parmesan to serve.
